Chili cook-offs: find your gathering

Official directories, useful questions, and a clear distinction between an informal tasting and a sanctioned competition.

Where to find chili cook-offs

Start with the organiser. Dates, categories, tickets, and entry rules belong to the individual event.

Chili competitions happen throughout the year. National Chili Day is a separate food observance, so a cook-off does not have to take place in February.

  • International Chili Society

Use the ICS cook-off directory to look for events and follow the event’s own registration information. Its championship and qualifying competitions have defined cooking categories.

  • Chili Appreciation Society International

CASI’s official website is a starting point for its competition network and the Terlingua championship tradition.

Why competition categories matter

A recipe that works beautifully at home may not meet a contest’s rules. Categories can specify ingredients, advance preparation, cooking time, and the way entries are presented.

For example, the ICS category description excludes beans from Traditional Red and requires them in Homestyle. That distinction is a contest rule, not a judgment on every family recipe.

Read the rules linked by the organiser for the season and event you’re entering. Do not rely on an older rules PDF, a recipe blog, or a general overview to confirm eligibility.

Before you attend or enter

  • Confirm the practical details. Check the date, address, opening times, ticket availability, and any changes announced by the organiser.
  • Understand the tasting format. Admission, tasting portions, and voting may be handled differently at different events.
  • For competitors, ask about requirements. Confirm equipment, cooking location, preparation, and serving arrangements directly with the event.
  • Keep ingredient information available. People need to know what they are tasting, especially when recipes contain dietary or allergen-sensitive ingredients.

Host a friendly tasting at home

Choose a small number of dishes and keep the format easy. Number the pots, provide tasting bowls, and ask guests to consider aroma, flavor, and texture rather than just heat.

A home gathering is not an officially sanctioned competition. You can set your own friendly theme, such as meat-free chili, family favorites, or different regional inspirations.

A historical detail worth getting right

The Texas State Library records a State Fair cook-off in 1952, while CASI traces its Terlingua championship to 1967. Calling Terlingua the first chili cook-off of any kind overlooks that distinction.
